Easily adapt this recipe; you can substitute the vegetables for whatever you have in your fridge, and you can also use any other protein.
Nutritional Benefits
This recipe contains spinach, which is a leafy green packed with vitamins and minerals and contains tons of iron. Rainbow Shrimp Bowl Recipe

Ingredients
- 6 medium shrimp, grilled
- ½ cup brown rice, cooked
- ¼ cup shredded carrots
- 2 cups spinach
- ¼ cup purple cabbage, shredded
- ¼ pickled onions*
- 1 teaspoon ginger, grated (optional)
- ¼ cup cilantro, chopped
- ¼ cup shredded carrots
- 1- 2 tablespoons tahini sauce
*Alternatively, you can make these at home using this recipe.
Directions
- Combine all ingredients into a bowl, dress with sauce. Enjoy!
