A Banana, Blackberry, & Raw Cacao Recipe

In Ireland, the day before Lent is Pancake Tuesday. Traditionally, pancakes are consumed to use up all the foods that are not supposed to be eaten during lent – eggs, butter, and milk. For this reason, many people use it as a day to consume high caloric and sugary meals, but here is a healthy pancakes recipe that is tasty, healthy, and nutritious!

With today being Pancake Tuesday, and Valentine’s Day being around the corner…here is a pancake recipe that will surely make your heart and tummy happy. Pancake Tuesday is often seen as a day to binge on HIGH sugar foods, unhealthy toppings and with all the additives that are in pancake mixes, you will surely be feeling sluggish all day. However, not all carbohydrates are created equally and natural sugars, such as those found in fruit do not have the same effect on the body as processed ones do.

Try out this high fiber, no added sugar recipe that will surely leave you feeling satisfied for the day.

Healthy oat pancakes, oatmeal pancakes, crepes, Banana, Blackberry, & Raw Cacao Pancakes

Banana, Blackberry, & Raw Cacao Pancakes!

Ingredients

  • 2 medium ripe bananas
  • 2 Pasture-raised eggs
  • 1 cup of milk (regular cow’s milk (skimmed), almond or coconut milk)
  • ½ cup of oats
  • ½ cup of blackberries
  • 1 teaspoon slivered almonds
  • A pinch of cinnamon and nutmeg
  • 1 teaspoon of raw cacao nibs
  • 1 teaspoon of vanilla extract

Instructions

  1. Mash the bananas in a bowl with a fork.
  2. Add the 2 eggs, milk, and mix with banana.
  3. Blend the oats in a blender until fine.
  4. Add oats to banana, egg, and milk mixture, add spices, nibs, and vanilla extract
  5. Using a dash of extra virgin olive oil, heat a skillet over medium heat.
  6. This recipe should serve approx. 5 pancakes so pour 1/5 of the mix onto the pan.
  7. Cook the pancake until golden brown and flip over to the other side, repeat!
  8. Serve with blackberries and slivered almonds, or suggested toppings below. Enjoy!

Suggested Toppings

  • Stew some berries in a pot over medium heat until soft, top the pancakes with berries, low-fat greek yogurt, or a drizzle of honey to add some sweetness.
  • Other toppings could include a dollop of protein-rich almond or peanut butter.

Remember, eating healthy doesn’t have to be boring and bland!
