Blueberry Chia Pudding

This Blueberry Chia Pudding recipe is the perfect breakfast, whether you’re on the go or you’re not bothered to make breakfast in the morning. It can be put together in less than 5 minutes, thrown in the fridge (not literally…), and is ready to go as soon as you’re awake! Plus, it’s delicious and nutritionist-approved – what more could you want?

Chia pudding is a really great breakfast that’s filling, easy and delicious! Plus it feels like you’re having dessert for breakfast – a great way to start the day! The great thing about chia seeds is that they can be eaten raw and last for a really long time in your pantry. Plus, when they soak in a liquid for a long period of time, they develop a gelatinous texture, which is why this seems like a pudding when left overnight!

Nutritional Benefits

Chia seeds are classified as a superfood, because they’re packed with a number of nutrients, including fiber, protein, healthy fats, vitamins, minerals, and antioxidants! They contain plant-based omega-3 fats, which are a necessary part of our diets, and they have a number of health benefits, such as supporting healthy cholesterol levels, fighting inflammation, and lowering the risk for diabetes. Chia seeds also contain phytochemicals and flavonoids, which can help protect against autoimmune disease and cancer and prevent rheumatoid arthritis. In addition to this, the high amount of dietary fiber in chia seeds means they can keep you full for longer, and also help promote proper digestion.

Flaxseeds are another ingredient containing a number of health benefits. They contain polyphenols, which are a type of micronutrient containing antioxidants. Flaxseeds can help boost heart health and control inflammation, as they also contain plant-based omega-3 fatty acids, like chia seeds. They can reduce the risk of cancer, and enhance overall digestive health as they contain lots of dietary fiber. Additionally, flaxseeds contain vitamins E, K, C, B6, and B12, as well as calcium, magnesium, phosphorus, and iron!

Blueberries are one of the only naturally occurring blue foods in nature! They’re also delicious little bursts of flavor, especially when they’re sweet! Blueberries are very nutritious, containing vitamins K, C, E, and B6, as well as manganese, riboflavin, and thiamin. They contain antioxidant and anti-inflammatory properties, and can also reduce the risk for some cancers and lower blood pressure.

As well as being a home remedy for sore throats, make-do body moisturizers, and hair conditioners (who knew!), honey has a multitude of health benefits! Honey contains anti-inflammatory properties, which help relieve chronic diseases like rheumatoid arthritis, heart disease, and diabetes. It can also lower the risk for cancer, neurologic diseases like depression, and cardiovascular diseases.


Blueberry Chia Pudding

Preparation: 5 mins
Inactive time: 8-12 hours

INGREDIENTS

  • 3 tablespoons chia seeds
  • ½ cup milk (can substitute for non-dairy milk)
  • 1 tablespoon flaxseed
  • tsp honey (or agave/maple syrup for vegans!)
  • 1 tablespoon cacao powder
  • ½ cup blueberries

DIRECTIONS: 

  1. In a small bowl or glass, combine all the ingredients except the blueberries and mix well together.
  2. Cover with plastic wrap and place in the fridge overnight.
  3. In the morning remove from the refrigerator, stir the chia pudding, and top with berries. Enjoy!

SERVING SUGGESTIONS/TIPS:

  • Feel free to top with nut butter or cinnamon!
