Spinach And Egg Scramble

Spinach and egg scramble is a super simple breakfast and is the perfect way to sneak in your daily intake of veggies, and some fiber to make them extra filling!

We recommend using extra virgin olive oil in this recipe, because not only does it add a delicious flavor to the eggs, but it has lots of nutritious value! Olive oil has a number of benefits, like lowering the risk of diabetes, cancer, and Alzheimer’s disease, as well as managing inflammation and improving heart health. It is also full of antioxidants! Olive oil can be sold as ‘pure’ or ‘refined’ olive oil, which is a mix of refined and extra virgin olive oil, resulting in a lower quality product. It can also be sold as olive-pomace oil, which is extracted using chemical solvents and should be avoided. We recommend purchasing extra virgin olive oil.

Nutritional Facts of Spinach And Egg Scramble

The chia seeds in this recipe are great because they offer lots of nutritional value without affecting the flavor. They contain fiber which also helps keep you fuller for longer. They fight inflammation and reduce the risk of diabetes. Even more, they are also full of omega-3 fatty acids, which are great for supporting healthy cholesterol levels, which reduce the risk of heart attacks and strokes. They are also a source of plant-based protein.

We use spinach in these eggs as their flavor is not overpowering but they still add some greens into our dish. They are packed with iron, which carries oxygen into our red blood cells, allowing the body to produce energy. They are also full of vitamins and minerals! Ensure that you are purchasing organic spinach, as it may otherwise contain pesticides, according to Environmental Working Group’s Dirty Dozen list.

We recommend purchasing pasture-raised eggs as this ensures that the hens they came from were roaming freely outdoors where they can consume a natural diet.

Adding radishes into these scrambled eggs adds a great crunch and color, so you’ll be eating a rainbow! They are also full of vitamin C, which is great for fighting disease, and fiber, which flushes your system and maintains a healthy digestive tract.


Spinach & Egg Scramble Recipe

Total time: 5-10 minutes

Ingredients:

  • 1 teaspoon extra virgin olive oil
  • 2 pasture-raised egg whites
  • 1 whole pasture-raised egg
  • 2 cups spinach
  • ½ cup radishes
  • 1 teaspoon chia seeds
  • 1 whole-wheat pita

Directions:

  1. Heat oil in a pan on medium heat. In a bowl, whisk together egg whites, whole egg and chia seeds.
  2. Pour egg mixture into pan. Continuously fold in the eggs until they set.
  3. Add spinach and radishes to the eggs. Fold eggs over in pan until slightly firm.
  4. Toast pita and top with eggs and spinach. Enjoy!
